Extracted from fresh coconut flesh, coconut milk is an important ingredient in Asian and particularly in Thai cuisine. As 80% of the product is coconut, it might solidify, i.e. the liquid part collects at the bottom. The harder and fatter part of the coconut milk located on the surface can be used instead of oil or butter to fry meat and vegetables in the wok. The liquid coconut milk is good for thickening sauces and soups. Stir the coconut milk well before use!
