Cook the noodles in salted water until they are firm to the bite (4-5 minutes). Strain, shock and drain. Cut the chicken meat into small pieces. Wash spring onions, Chinese cabbage and broccoli and cut them into fine stripes. Peel and finely chop the cloves of garlic. Pour wok oil into the pre-heated wok and fry the meat for a minute.
Add chilies and ginger, constant stirring. Add wok vegetables as well as the rest of the vegetables to the wok and allow the mixture to fry, constantly stirring. Push the vegetables onto the side and add the shrimps. Allow them to fry for a minute. Season with soy sauce and Sambal Oelek.
Add egg noodles and mix everything. Allow the mixture to fry for a minute, then garnish with coriander.
